Baked Salmon with Toasted Bread Crumbs & Capers

One wise salmon farmer wrote: "Give a man a fish and you have fed him for today. Teach a man to fish and you have fed him for a lifetime. Teach a man to farm fish and you have fed him and generations for many lifetimes."

This holiday season, why not try a delicious recipe with fresh and delicious BC farmed salmon? We hope you enjoy this recipe.

Ingredients

  • 4 tbsp olive oil
  • 4 tbsp lemon juice
  • 3 salmon fillets, 5-6 ounces each
  • 2 cups coarse bread crumbs, toasted (preferably fresh)
  • 3 tbsp capers
  • 2 tbsp melted butter
  • Salt & Pepper

Method

Brush both sides with lemon juice & olive oil. Place on lightly-oiled baking tray, skin side down. Salt & pepper, cover with bread crumbs, sprinkle with capers and melted butter. Bake in preheated 500 degree oven for 6-8 minutes. Enjoy.
